Serve this Walnut Creek Cabbage Salad with orange sections, green onions and walnuts with pork for dinner. Leftovers? No problem, this salad is freezable. Try it with a homemade mustard dressing. Serves 4-6 Total Time: 20 minutes
Ingredients:
1 small head white cabbage, shredded
6 green onions, sliced
3/4 cup walnuts, coarsely chopped
2 cans Mandarin oranges, drained
Mustard Dressing:
1/2 cup olive oil
1/4 cup lemon juice
2 tablespoons sugar
1 teaspoon dry mustard
Salt and pepper, to taste
Directions:
In a serving bowl add the shredded lettuce, green onions, walnuts and mandarin oranges. Combine dressing ingredients with a whisk or blender. Mix dressing with salad and serve. Yum Yum!
