Ingredients:
4 5oz cube steaks
Salt and pepper, to taste
1 tablespoon butter
Salsa:
2 large tomatoes, chopped
2 tablespoons chopped red onion
3 tablespoons chopped celery
3 tablespoons chopped green pepper
2 tablespoons chopped green chilies
1/2 teaspoon mustard seed
1 tablespoon red wine vinegar
1 tablespoon chopped parsley or cilantro
Salt and pepper, to taste
2 tablespoons olive oil
Garnish: sour cream and shredded cheddar cheese
Directions:
In a bowl combine all the salsa ingredients, set aside.
In a skillet melt butter on medium heat, brown cube steaks on both sides. Reduce heat and cook to your desired temperature. Salt and pepper, to taste. Remove to a serving platter and top each steak with some salsa. Serve remaining salsa along side with the sour cream and shredded cheddar cheese. Yum Yum!
