Don’t you like to have breakfast for dinner every once in awhile? I went to Friday’s the other night and wasn’t that hungry, so I thought an omelet would be good and not that filling. I know Friday’s omelet comes with fries that my date was more than happy to eat those. When I make this at home I’ll probably switch out the fries for hash browns or a piece of toast. I just love all the vegetables in this omelet. And you will too. It comes with a chili-lime sauce. Serves 1
Ingredients:
3 large eggs
Salt and pepper, to taste
2 tablespoons water
3 tablespoons olive oil, divided
1/4 cup red bell pepper, chopped
1/4 cup green bell pepper, chopped
1/8 cup onions, chopped
1/2 shredded Swiss cheese
Handful of baby spinach
1/4 cup roasted asparagus, chopped
2 strips of bacon, cooked and crumbled
Dash of dried parsley to garnish
Chili-lime sauce:
2 tablespoons sweet chili sauce
2 teaspoons lime juice
1/2 teaspoon fresh grated ginger
1/4 teaspoon minced garlic
Directions:
Preheat oven to 425F. On a baking sheet and chopped asparagus and drizzle a tablespoon of olive oil. Bake 12-15 minutes, until just tender.
I’m going to cook my vegetables first in a skillet on med/high heat with a tablespoon of olive oil to softened the peppers and onions, 2-3 minutes. Then add in the spinach; cook until wilted. Add in roasted asparagus and crumbled bacon. Remove from heat, set aside.
I always add a little water to my eggs when making an omelet. Whisking water into eggs will fluff them up. In an omelet pan on med heat add a tablespoon of olive oil or butter. When hot add in your eggs; mixture should set immediately at edges. Gently push cooked portions from edges toward center with an inverted turner so the uncooked eggs can reach the hot pan surface. Tilt the pan and cook the eggs that need it. When the eggs thicken place the fillings on top and gently fold the omelet in half with turner. Once cheese melts slide unto your plate and sprinkle with parsley. Adjust salt and pepper, if needed.
Chili-lime sauce: mix all the ingredients together and serve with omelet. Yum Yum!
You might want a nice pan made for omelets and a turner
