I love sweet potatoes and I love this Whipped Sweet Potatoes with Ginger, because it’s different than your usual sweet potato casserole. Now I’d pair this side dish with Red Wine Soy-Braised Short Ribs or Chicken with Roasted Grapes. Serves 4-6 Total Time: 25 minutes
Ingredients:
2 lbs sweet potatoes, peel and slice into 1/2” pieces
Water
2 tablespoons butter, ghee or olive oil
1 shallot, finely diced
1 tablespoon fresh ginger, grated
1 clove garlic, minced
1 teaspoon salt
Pepper, to taste
1 teaspoon apple cider vinegar
Directions:
Add water and potatoes in a saucepan and cook until tender, 12-15 minutes. Drain, but save 1/2 cup of the liquid. In the same saucepan add the 2 tablespoons of fat (butter, ghee or oil) over medium heat then add the shallots, ginger and garlic, stir until golden about 2-3 minutes. Add the potatoes back in a mash with a potato masher. Add some of the liquid to loosen it. Pour it all into a food processor to whip until smooth. You might need to pour in the remaining reserved liquid to get the consistency you desire. Season with salt, pepper and apple cider vinegar. Yum Yum!
