Unwich, Wrap whatever you want to call it, it has to be pretty easy to make at home. Jimmy John’s Vito Unwich is my go to for fast food either for a quick dinner or lunch. Only 4g carbs, 17g protein and 435 calories I think I’m getting a pretty healthy meal, but then I add some skinny or thinny chips and a large chocolate chip cookie and there goes the diet. If only I could make this wrap at home and save myself from eating the extra fatty foods. And I can! Makes 1
Ingredients:
4 slices of Genoa salami
4 slices of pepperoni
1-2 slices provolone cheese
1 small tomato, thinly sliced
1 small red onion, thinly sliced
Salt and pepper, to taste
Italian Vinaigrette:
1 tablespoon olive oil
1-2 teaspoons red wine vinegar
1/2 teaspoon oregano
3-4 large iceberg lettuce leaves
Parchment paper for wrapping
Directions:
Lay out 3-4 iceberg lettuce leaves on top of a piece of parchment paper, make sure the lettuce leaves are over lapping. Place your meat on the lettuce first, then the cheese, tomatoes (3 slices max) and onions. Combine the vinaigrette ingredients then drizzle over top and salt and pepper, to taste. Wrap the lettuce up like a burrito tucking in the bottom edge. Then wrap up the parchment paper around the lettuce. Yum Yum!

This recipe serves 6 and takes 4 hours and 20 minutes to make. I’m not going to cook a turkey tenderloin in a crockpot for 4 hours. I’ll use deli turkey slices instead.
Ingredients:
2 sprigs of fresh tarragon or flat-leaf parsley, snip enough to make 1 teaspoon
Deli turkey, sliced thin (you need 2-3 slices per wrap, 18 slices max)
1 red apple, sliced thin
3 tablespoons pistachio nuts, chopped
6-12 Swiss Chard leaves or Boston Bibb lettuce leaves
1/4 cup blue cheese crumbles
Dressing:
3 tablespoons balsamic vinegar
2 tablespoons olive oil
1 teaspoon honey
1/4 teaspoon black pepper
Directions:
In a bowl combine the dressing ingredients then add in the apple slices and pistachio to coat. Arrange lettuce leaves to over lap, then add the 2-3 slices of deli turkey, top with apple mixture and sprinkle with blue cheese crumbles and tarragon or parsley. Roll lettuce up like a burrito folding in bottom edge. Wrap with parchment paper. Yum Yum!
