Chicken Waffle Sliders

My granddaughter, Caitlyn, discovered chicken waffles at school this year. I on the other hand have never tried this combination. Recently, we went to Top Golf and they serve them as sliders with a side of maple syrup and white gravy.  I personally think these could be made very easy and would be great for an after school snack or more homemade for get togethers like watching football on a Sunday afternoon.

This is the easy way...serves 16
Ingredients:

16 pieces of popcorn chicken
32 mini Eggo waffles
Maple syrup
White gravy or ranch dressing (Caitlyn preference)

Directions:

On a baking sheet add your chicken in a single layer. Place in a 425F preheated oven for 20 minutes, turning once. Make your mini Eggo waffles according to package instructions. On a serving platter transfer 16 waffles and top with a piece of chicken , then place the remaining waffles on top of the chicken. Secure with a toothpick, if needed. Serve with your favorite toppings or dips. Yum Yum!

Homemade way...serves 8
Chicken Ingredients:

4 skinless boneless chicken breasts, cut in half
Salt and pepper, to taste
Flour, enough for dredging
1/4 teaspoon paprika
2 tablespoons butter
1 tablespoon vegetable oil

Directions:

Place a piece of chicken between two pieces of plastic wrap. Pound lightly until they are 1/4”-1/8” thick. Remove plastic wrap and set aside. Repeat with remaining chicken pieces. In a shallow bowl combine the salt, pepper, flour and paprika. Coat the chicken with the flour mixture. In a skillet cook the chicken in the hot butter and vegetable oil over medium heat until browned or until the internal temperature reaches 160F. Remove to a plate, cover to retain heat.

Waffle Ingredients:

2 cups flour
2 tablespoons sugar
4 teaspoons baking powder
1 teaspoon salt
2 eggs
1 1/2 cups warm milk
6 tablespoons unsalted butter, melted
1 teaspoon vanilla extract

Directions:

Preheat your waffle iron. In a large bowl whisk together the first four dry ingredients. In a separate bowl whisk the eggs then stir in the warm milk, melted butter and extract. Pour the wet ingredients into the dry ingredients and whisk until blended. Ladle the batter into the waffle iron and cook until golden brown and crisp.

To serve: This waffles are going to be too big for sliders so you can cut them in quarters. OR..you can use your daughters mini waffle maker.  ðŸ˜ƒ. On a serving platter place 8 waffle pieces and top with a piece of chicken. On top of the chicken place a waffle. Secure with a toothpick, if needed. And again serve them with your favorite dips or toppings. Yum Yum!
