Using a garlic flavored seasoning spray will spice up any baked potato and satisfy your family’s appetite. Serves 4
Ingredients:
2 baking potatoes, scrubbed
Garlic flavored seasoning spray
1/3 cup skim milk
2 tablespoons non-fat sour cream
1/2 cup shredded cheddar cheese
Salt and pepper, to taste
1 teaspoon chives (optional)
Directions:
Preheat oven to 375F. Prick potatoes several times with a fork and place directly on an oven rack. Bake 1 hour. Keeping oven on, remove potatoes letting cool slightly.
Carefully cut the potatoes in half lengthwise. Scoop out the insides into a bowl, leaving a 1/4” shell. Set skins aside. Spray potatoes with the garlic flavored seasoning spray for about 3 seconds. Add the milk, sour cream, cheese, salt and pepper, to taste. Mash mixture with a hand mixture or by hand. Continue beating until desired consistency.
Spoon potato mixture back into the individual potato skins, mounding slightly. Arrange skins on a baking sheet and return to oven for 20-25 minutes. Sprinkle with chives and serve immediately. Yum Yum!
