This Taco Bake is like a big party dip served warm or an upside down taco salad, because the lettuce is on top. It’s just another way to have everyone’s favorite taco on Taco Tuesday. Serves 6 Total Time: 60 minutes
Ingredients:
1 lb ground beef
1/2 cup green pepper, chopped
1/2 cup onion, chopped
1 pkg (1 1/4oz) taco seasoning
3/4 cup water
1/2 cup mayonnaise
8 corn tortillas
1 8oz jar salsa
1 cup (4oz) shredded Mexican blend cheese
Toppings: lettuce, tomatoes (chopped), cilantro leaves and sour cream (optional)
Directions:
Preheat oven to 350F. Brown meat in a skillet and drain fat. Add the onions and green peppers, cook until softened. Add in the seasoning, water and mayonnaise, cook 5 minutes over medium heat.
Arrange and overlap the tortillas around the bottom and the sides of a 9” pie plate, top with the meat mixture and the salsa. Bake for 30 minutes, sprinkle on cheese and bake an additional 5 minutes or until cheese melts. Let stand for 15 minutes. Top with lettuce, tomatoes, cilantro and sour cream, if desired. Yum Yum!
