One of the easiest ways to cook chicken is to bake it. However, while this produces extremely tender meat, it often looks pale and unappetizing. This recipe solves this problem by cooking the chicken in a flavorful sauce made with Kikkoman Soy Sauce, vinegar, garlic and oregano.
Only a naturally brewed soy sauce that has been aged has the distinctive taste qualities to provide a savory balance without overpowering the other ingredients. To give color to the skin the chicken is broiled for 5 minutes. Serves 4 Total Time: 60 minutes
Ingredients:
1/4 cup Kikkoman soy sauce
2 tablespoons vinegar
1 large clove garlic, pressed
1 teaspoon dried oregano
3 lbs frying chicken pieces
Directions:
Combine the soy sauce, vinegar, garlic and oregano, pour over chicken in a large shallow oven-proof baking pan. Turn chicken over several times to coat both sides in sauce. Arrange in a single layer, skin side down. Cover with foil and seal edges. Bake in a 375F oven 20 minutes, then turn chicken over, recover and bake an additional 25 minutes, or until chicken’s internal temperature reaches 160F. Discard foil and brush chicken with pan drippings. Turn on broiler and place oven rack ar the top position for broiling. Broil for 5 minutes or until golden brown and crispy. Yum Yum!
