This Greek Horiatiki Salad would be great to make the night before and take it to work the next day. In fact, if stored properly in the fridge you could have it for a couple days. This salad was my go to dinner when I was dieting with only 233 calories. Not only does it tastes great, it is good for you. Serves 4 Total Time: 15 minutes
Ingredients:
1/2 small green pepper, chopped
1/2 small red onion, chopped
1/3 cup kalamata olives
1/4 seedless cucumber, chopped
1 cup cherry tomatoes, halved
2 tablespoons extra-virgin olive oil
2 teaspoons fresh oregano, finely chopped
2 teaspoons freshly squeezed lemon juice
Salt and pepper, to taste
8 oz feta, sliced thick
Directions:
In a serving bowl (or plastic bowl w/lid if keeping overnight) toss together all ingredients except the feta. When serving add a thick slice of feta. Yum Yum!
