Pepper steak is a stir-fried Chinese American dish consisting of sliced beef steak cooked with sliced yellow and/or red bell peppers (or green) and other seasonings, and usually thickened with cornstarch. Serves 4 Total Time: about an hour not including the marinade time
Ingredients:
Marinade
In a large plastic bag add enough beef broth 1-2 cups, a 1/2 cup red wine and some dried basil to cover the meat. Let sit room temperature for 4 hours or overnight in the refrigerator.
1 lb beef round steak, cut into 1/4” x 3” strips
2 tablespoons vegetable oil
2 medium onions, sliced in rings
1 clove garlic, minced
2 tablespoons Worcestershire sauce
Salt and vinegar, to taste
2 small red peppers, seeded and sliced
2 small yellow peppers, seeded and sliced
2 tablespoons cornstarch & 1/4 cup water
2 tomatoes, cut into wedges
Enough rice for 4 people, cooked according to package instructions
Directions:
In a skillet add the oil on medium/high heat then cook the marinaded meat, onions and garlic for 6-7 minutes or until onions are tender. Stir in the marinade, Worcestershire and salt and pepper, to taste. Bring to boil then reduce to simmer, cover and cook 30 minutes. Add peppers and cook an additional 5 minutes. Combine the cornstarch and water and mix well until smooth. Stir it into the meat and cook on high heat until thickens and bubbles. Reduce heat add tomatoes, cover and cook for 3-4 minutes. Serve over cooked rice. Yum Yum!
