This French Country-Style Beef Stew can be served for lunch or dinner and is great for a winter day. I always have a couple cans of stewed tomatoes on hand. My usual go to recipe is cooking spare ribs in stewed tomatoes, but now I have a new favorite recipe. Serves 6-8 Total Time 1 hour 10 minutes
Ingredients:
1 1/2 lbs stew beef, cut into 1” cubes
2 tablespoons olive oil
Salt and pepper, to taste
2 cans of stewed tomatoes
1 can (13 3/4oz) beef broth
4 medium carrots, peeled and cut into 1” pieces
2 medium yellow potatoes, pared and cut into 1” pieces
3/4 teaspoon thyme
2 tablespoons Dijon mustard (optional)
Chopped parsley to garnish
Directions:
Combine the meat and flour into a bag and toss to coat evenly. In your Dutch Oven on medium/high heat brown the meat in the oil. Salt and pepper, to taste. Add the remaining ingredients except the mustard. Bring to boil then reduce to simmer. Cover and cook 1 hour or until beef is tender. Add mustard if using and stir to combine. Garnish with chopped parsley. Serve with some French bread. Yum Yum!
