Pineapple Salsa

Today was my Taco cooking class at Sur La Table and we made this easy Pineapple Salsa for our Instant Pot Pork Carnitas. 

Ingredients: 

1 1/2 cups diced pineapple 
1 small red bell pepper, cored and finely diced
1 jalapeƱo pepper, seeded and minced 
1 garlic clove, minced 
2 tablespoons fresh cilantro, chopped 
2 tablespoons fresh lime juice (1/2 lime)
Salt and pepper, to taste 

Directions:

In a medium bowl add all the ingredients and toss to combine. Taste and adjust salt, if needed. Yum Yum!
