Taste of Home Denver Omelet Salad...did anyone see this in Taste of Home April/May Magazine
I loved my BLT Salad for Breakfast (in fact I had it for dinner last night), that I thought this salad would be just as easy and good. If you like Denver omelets you should try this salad. Serves 4. Total Time: 25 minutes
Ingredients:
8 cups fresh spinach
1 cup tomatoes, chopped
2 tablespoons olive oil, divided
1 1/2 cups fully cooked ham, diced
1 small onion, chopped
1 small green pepper, chopped
4 large eggs, fried
Salt and pepper, to taste
Directions:
On a platter arrange the spinach and tomatoes, set aside.
In a large skillet heat 1 tablespoon of the olive oil over med/high heat. When oil is hot add in the ham, onion and green pepper cook until ham is heated through and the vegetables are tender, about 5-7 minutes. Spoon them over the spinach and tomatoes.
In the same skillet, add the eggs one at a time and fry them to your desired temperature, aka, over easy, sunny-side up, etc.. Top salad with eggs, salt and pepper, to taste. Serve. Yum Yum!
