St Patrick’s Day Fruit Tart
I watched MasterChef Junior tonight and the kids had to make a fruit tart. Like me, some of them had never made on before. I thought if I’m going to attempt to make one why not make one for St Patrick’s Day. Either an all green one or one that has the colors of the Irish flag 🇮🇪.
I’ll give you a recipe for the crust, filling and an optional fruit topping, because you can make this tart your own with any fruit topping you prefer. There is also a fruit glaze that you can make to go with your topping.
You’ll need a food processor or blender and a 9” tart pan with removable bottom.
Step 1
Crust Ingredients:
10 graham crackers
2 tablespoons sugar
6 tablespoons butter, melted
Crust Directions:
Preheat oven to 350F. Prepare a 9” tart pan with removable bottom. Place graham crackers in a food processor or blender and pulse until fine crumbs are formed. Transfer to a med size bowl and add the sugar and melted butter. Mix well. Transfer into the tart pan and press to the sides and bottom, making sure that it’s evenly spread. Bake for 10-15 minutes. Let cool completely to room temperature.
Step 2
Pastry Cream Ingredients:
3 egg yolks
1/r cup sugar
1 1/4 cup milk
1 teaspoon vanilla extract
2 tablespoons flour
2 tablespoons cornstarch
Pastry Cream Directions:
Mix egg yolks and sugar together with a hand mixer until combined. Sift the flour and cornstarch together and stir into egg mixture to form a paste.
Heat the milk on medium heat until it starts to bubble around the edges. Remove from heat. Gradually add it to the egg mixture whisking continuously to prevent the eggs from curdling. Return to medium heat and cook until boiling; continue whisking. Once boils whisk for another 30-60 seconds to thicken then remove from heat. Immediately stir in the vanilla extract. Cover with plastic wrap to prevent crust from forming and keep refrigerated until ready to use. When crust has cooled, fill with pastry cream (if your crust is a half inch thick then your pastry cream needs to be a half inch thick). Top with fruit of your choice. If making the Irish Flag Fruit tart you’ll need; 1 sliced banana, 1/2 can of mandarin oranges and 8-10 kiwi peeled and sliced.
Step 3
Glaze Ingredients:
1/3 cup sugar
1 1/2 teaspoons cornstarch
1/3 cup water
1 teaspoon lemon juice
1/2 cup orange juice or juice that complements your fruit.
Glaze Directions:
In a medium size saucepan on medium heat add all ingredients and cook until thickens. Brush on the fruit, slice and serve. Yum Yum!
