I’m a little behind on my New Year’s Day pork and sauerkraut good luck dinner. Will I still have good luck the rest of the year? Or am I out of luck until next year? No matter what I do enjoy a good Pork Chop and Sauerkraut Bake. Serves 4-6
Ingredients:
4-6 pork chops or steaks (loin or end cuts)
Salt and pepper, to taste
3-4 red potatoes, quartered + 1 or 2 to shred
1 can of sauerkraut
1 medium onion, sliced thin
2 tablespoons brown sugar
2 tablespoons olive oil
Directions:
Preheat oven to 350F. Season the pork chops with the salt and pepper. In a large nonstick skillet over medium heat add the oil. When the oil is hot brown the chops on both sides, about 5 minutes per side. Set aside.
Drain the can of sauerkraut and mix it with the shredded potatoes and onions in a bowl.
In a 11x7 baking dish add the quartered potatoes, then the sauerkraut and finally the browned pork chops. Sprinkle the brown sugar on top. Cover with aluminum foil and bake for 1 hour and 15 minutes. Serve hot. Yum Yum!
