Irish Flag Salads

Here we have two different kinds of Irish Flag Salads. One is a spinach and fruit salad and the other is a fruit and cream parfait.

They would be a great side dish for your St. Patrick’s Day meal. I could also see eating either of these on a summers day, light and refreshing.

Irish Flag Spinach and Fruit Salad
Serves 4 Prep 20 minutes

Ingredients:

1 6 oz package of fresh baby spinach
2 med pears, thinly sliced
2 medium oranges, peeled and sectioned
2 tablespoons feta cheese
2 tablespoons pistachios, shelled and chopped

Dressing:
3 tablespoons canola oil
2 tablespoons orange juice
1 tablespoon lemon juice
1 teaspoon honey
1/2 teaspoon grated orange zest
1/4 teaspoon salt

Directions:

Arrange spinach on plates then add the fruit, cheese and nuts. Whisk dressing ingredients together and drizzle on salad. Yum Yum!


Irish Flag Fruit and Cream Parfait
Serves 4 Prep 20 minutes

Ingredients:

4 ripe kiwis
1 large can of mandarin oranges
1 1/2 cups heavy whipping cream
10-12 vanilla meringue cookies
1-2 tablespoons of powdered sugar (optional to sweeten whipped cream)

Directions:

Peel and dice the kiwi fruit. Drain the can of mandarin oranges and discard the liquid.  In a medium size bowl crumble the vanilla meringue cookies into small pieces. In a small bowl whip the heavy whipping cream and sugar, if used. Mix the meringue pieces and whipping cream together. Fill a parfait, wine or Irish coffee glass with kiwi pieces then the meringue and top with a layer of mandarin oranges. Refrigerate 15 minutes before serving. Yum Yum!
