Instant Pot Country Style Pork Ribs

Yum... Country Style Pork Ribs seared to hold in their juices, smothered in a tomato sauce and cooked under pressure until they fall apart. No knife needed here!

I’ve made these plenty of times in my electric skillet, but this time I’m going to try to make them in my Instant Pot. Since I have a mini Instant Pot I’ll have to make just half of the recipe. The recipe I’m modifying uses BBQ sauce, while I’m going to use a can of stewed tomatoes with the beef broth. I’m also wondering if I reduce the amount of meat should I reduce the time it’s cooked under pressure???  The recipe book states that ribs can be cooked 20-25 minutes. I’m thinking I’ll cook them for 25 minutes and use the 20 natural release method. If I don’t feel they are done, I’ll cook them a little longer, maybe 10 minutes . I do want them to fall apart, so I’ll let you know.

I went to the Indianapolis Food Fest yesterday and picked up a jar of cherry smoked sea salt, which I’ll be using in my rub instead of the regular salt in the recipe.

Ingredients:

3 lbs country style ribs
2 tablespoons olive oil
1 can of stewed tomatoes, quarter large pieces or 1/2 cup of BBQ sauce
3/4 cup beef broth or water

Rub:
1 teaspoon each salt or a smoked salt, pepper, paprika, onion powder, garlic powder and cumin
1 tablespoon brown sugar
1/4 teaspoon cayenne pepper, optional

Directions:

Combine your rub ingredients together in a med size bowl and rub on both sides of ribs. Turn on your Instant pot to sauté on high and add in the oil. When the oil is heated add in the ribs and brown them on all sides. Remove the ribs. Cancel the sauté method, add the broth first, scrape the bottom of the pan for any brown bits, then add the ribs back in and finally the stewed tomatoes or BBQ sauce. Put on the lid and make sure the steam release valve is secured, cook on high under pressure for 45 minutes. Use the natural release method (15-20 minutes). Serve hot with your favorite sides. Yum Yum!
