Saw this recipe and had to have it. I changed it a little because I love onions, so they are optional. I also cut the amount of eggs in half and I think there is still enough to make 2-3 sandwiches. The ingredients are:
3 eggs, hard boiled
4 slices of bacon, microwaved and crumbled
1/2 cup mayo
1 Tablespoon of mustard
1 teaspoon of vinegar
1 teaspoon of dried parsley flakes
1/2 teaspoon salt
1/2 teaspoon pepper
1/4 cup shredded cheddar cheese
3 green onions, chopped (optional)
Directions:
Place eggs in a pot of boiling water, then reduce heat to low, cover and let simmer for 15-20 minutes. While the eggs are cooking, place bacon on a microwaveable plate cover with paper towel and cook for 3 minutes. When done let cool then crumble. Chop the green onions. In a small bowl mix the mayo, bacon, green onion and mustard. When the eggs are done peel off shell and mash; add to bowl and stir. Add in the parsley, cheddar cheese, salt and pepper. Serve on toast. Yum Yum
